Ingredients For agave oatmeal cookies

1/2 cunsalted butter, softened

3/4 cagave nectar

2 lgeggs

1 tspvanilla extract

1 Tbspgrated orange zest

1 1/2 cwhole wheat flour (try to find pastry flour)

1 3/4 cregular rolled oats
-
1/4 cflaxseed meal
-
1 tspground cinnamon
-
1/2 tspbaking soda

1/2 tspsalt
-
3/4 cdried cranberries (or raisins)
How To Make agave oatmeal cookies

1Preheat oven to 325F. Line 2 baking sheets with parchment paper.

2Using an electric mixer, in a large bowl cream the butter with the agave and light and fluffy, about 2 minutes. Beat in the eggs, one at a time, and stir in vanilla and orange zest.

3In a separate bowl, combine flour, oats, falxseed meal, cinnamon, baking soda and salt. Add to butter mixture and stir until just combined. Fold in dried cranberries (or raisins).

4Drop by heaping tablespoonfuls onto prepared baking sheets and using the back of a spoon, flatten slightly and bake 12 minutes, or until slightly browned.

5Cool on wire rack.
