Microwave Chocolate Pudding
You already have all the ingredients in your pantry to whip this yummy pudding up in a flash!

- granulated sugar
- 1/3 c
- unsweetened cocoa powder
- 3 Tbsp
- 2 c
- 2 tsp
- pure vanilla extract
1In a microwave-safe bowl, whisk together sugar, cocoa and cornstarch. Whisk in milk a little at a time so the mixture doesn't have any dry lumps.
Place in microwave and cook for 3 minutes on HIGH. Stir, then cook at 1 minute intervals, stirring after each minute for 2-4 additional minutes, or until shiny and thick. Stir in vanilla extract.
Place a piece of plastic wrap directly on surface and chill in the refrigerator. Serve cold.
2**I LOVE dark chocolate and use the Hershey's Special Dark cocoa to make DARK chocolate pudding! OMG -- it's to die for! :-)
