Creamy Cocoa Cheesecake

This is a most requested recipe for birthdays in my house! I have started to use GF cookies for the crust since I have gone gluten free...and no one can tell the difference!
I entered the GF version in our county fair's bake off and won first prize!

Ingredients

1 c
graham cracker crumbs, reg or chocolate or gf chocolate cookie
3 Tbsp
sugar
3 Tbsp
butter, melted
2 8oz pkg
cream cheese
3/4 c
sugar
1/3 c
cocoa powder
1 tsp
vanilla
2
eggs
1 c
sour cream
2 Tbsp
sugar
1 tsp
vanilla
garnishes as desired

Step-By-Step

1Combine crumbs. 3 T sugar and butter. Press into 8,9 or 10" spring form pan. (depending on how thick you like your cheese cake!) I like the 9". Go up a little bit of the side.
2Combine cream cheese, 3/4C sugar, cocoa and 1 tsp vanilla. Mix until well blended.
3Blend in eggs and pour into crust.
4Bake at 375F for 30 minutes.
5Combine sour cream, 2T sugar and 1t vanilla. Carefully spread over cake once it comes out of the oven.
6Turn oven up to 425F and bake topped cheesecake for another 10 minutes. Loosen pan, cool and remove sides. Cool.
Garnish as desired and keep chilled.
