Christmas Peanut Butter Coconut Cherry Balls

My mother made these every year for Christmas. She would make them and freeze them thinking they would last until Christmas, FYI - they are GREAT frozen. Just ask all 6 of us kids!!

Ingredients

BALLS

1 stick
butter (softened)
1 1/3 c
peanut butter (smooth or crunchy)
4 c
powdered sugar

maraschino cherries (chopped fine)
2 c
coconut

DIPPING CHOCOLATE

6 oz
chocolate chips (milk, semi-sweet or dark, your choice)
6 Tbsp
paraffin

Directions Step-By-Step

Mix together thoroughly, and roll in very small balls.

Put in freezer for several hours or preferably overnight.

Melt in double boiler... 6 oz chocolate chips, 6 tablespoons paraffin. Dip Frozen balls in and drain over waxed paper on a rack. Can double dip if Want. I usually doubled the cherry mixture and the chips mixture made Enough for dipping a double batch... enjoy...
