3 c
gluten free flour(bob's red mill all-purpose baking flour
1 Tbsp
gluten free baking powder
2 tsp
baking soda
2 tsp
cinnamon, ground
1/2 tsp
ground nutmeg
1/2 tsp
ground ginger
2 c
ground raw sugar
1 can(s)
crushed pineapple, drained
eggs, room temperature
2 tsp
organic vanilla extract
2 c
grated carrots
1 1/2 c
chopped walnuts. optional
1 c
organic shredded coconut
1/2 c
organic applesauce
1 1/2 tsp
xanthan gum


1Pre-heat oven to 350 degrees
Spray two round 8" cake pans with cooking spray
2Mix flour, can than gum, baking powder, baking soda,cinnamon,ginger, and nutmeg in a bowl whisk together until thoroughly combined. Set aside
3Beat the sugar, pineapple and eggs in a large bowl until smooth. Ad vanilla and remix thoroughly
4Slowly add flour mix into wet ingredients, beat at medium speed until mixed well, fold in carrots, walnuts, and coconut
5Pour batter evenly into the prepared cake pans.
Bake for 50 minutes or until toothpick inserted comes out clean
6Cool on wire racks, once cool
Frost cake with gluten free cream cheese frosting
