I once went to Capri and had this wonderful cake. It is made with no flour only almonds from the zone and chocolate !

Ingredients

2 3/8 c
toasted almonds ( 400 grams )
1 1/3 c
sugar ( 300 grams )
1 1/3 c
butter, softened ( 300 grams )
9 oz
chocolate bar ( 250 grams )
6
eggs, separated
1 Tbsp
vanilla extract
1 pinch
salt

Step-By-Step

1Chop almonds very fine in a blender with 200 grams of sugar

2Work with the electric whisk the butter with the remaining sugar until frothy and white.

3Add the ground almonds and vanilla. Keep mixing and add the egg yolks one at a time and then the melted chocolate

4Preheat the oven to 350 degrees,

5Whip the egg whites until stiff with a pinch of salt and incorporate them with movements from the bottom up very carefully . Pour in a cake pan lined with grease proof paper

6Bake for 40/ 50 minutes, let cool and serve sprinkled with powdered sugar.
