My 8 year old Grand Daughter came up with this idea for a truly different cupcake, Moist and Oh So Yummy with a surprise crunch on the bottom and bits of creamy Oreo filling and crunchy cookie bits throughout. The Superb Frosting recipe is from a cookbook that is over 60 years old, My Mom received the cookbook as a Wedding shower gift, it is spiral bound and the recipes were originally handwritten before being published in the cookbook, it originates from Jersey Shores , Pennsylvania. Everyone who has had the frosting says it tastes like whipped cream! Hope you enjoy it also!

Ingredients For satinka's cookie cupcakes

  • 1-15 oz. pkg
    oreo cookies
  • 2 c
    flour
  • 1 1/2 c
    sugar
  • 3/4 c
    cocoa powder
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 c
    whole milk
  • 1/2 c
    canola oil
  • 2
    eggs
  • 2 tsp
    vanilla extract
  • 1 c
    hot coffee
  • 24
    cupcake liners
  • SUPERB FROSTING
  • 1 c
    crisco shortening
  • 2 Tbsp
    butter, softened
  • 2 c
    sifted powdered sugar
  • 2 Tbsp
    sifted flour
  • 2 Tbsp
    whole milk
  • 2 tsp
    vanilla extract

How To Make satinka's cookie cupcakes

    Remove tops from Oreo cookies. set aside the part's with filling, crush the other part's and set aside.

    Preheat oven to 350 degrees.

    In a large mixing bowl sift the dry ingredients, add eggs, milk, oil and vanilla, beat on medium speed for 2 minutes, scrape sides of bowl, add coffee , beat on low speed just until blended. Add crushed cookies and stir just to blend.

    Put cupcake liners in cupcake pans, put just enough batter in each liner to cover bottom, add a cookie with filling side up to each partially filled liner, fill each 3/4 full with batter. Bake for 18 to 20 minutes

    Let cool in pans for 10 minutes, carefully remove cupcakes to cooling racks. When completely cool , frost with the Suberb Frosting and decorate as desired

    Prepare frosting - In a large mixing bowl combine Crisco and butter, beat on medium for 3 minutes, scrape sides of bowl occasionally.

    Add 1 cup of the powdered sugar and the flour, beat on medium for 2 minutes, scrape sides of bowl, add remaining powdered sugar, beat for 1 more minute, mixture will be stiff, add milk and vanilla , beat for 2 minutes.
