Got and tweeked this recipe from a student in my class. Her mom made the most delish muffins! Never a crumb leftover, trust me!

Ingredients

3
eggs
2 c
sugar
1 1/2 c
vegetable oil
29 oz
pumpkin, canned or cooked
3 c
flour
1 tsp
baking powder
1 tsp
baking soda
1 tsp
cinnamon, ground
1/2 tsp
nutmeg
1 tsp
salt
1/2
bag mini semi sweet chocolate chips

Step-By-Step

1Mix eggs, sugar, veg. oil, pumpkin well. Then add flour, baking soda, baking powder, cinnamon, nutmeg, and salt, until blended. fold chocolate chips evenly into batter.

2Fill muffin tins with liners. Fill each with 2/3 batter. Bake at 375 for 20-25 minutes. Yum!
