Yes, you DID read that right. Why a beer cake? Well, for one thing it makes you very popular with all the guys! Beer is actually a great asset to cakes. The results are a full flavored and very moist cake. Of course, the buttermilk will also lend to the moist factor. You may, of course, make this into a layer cake and amend baking time accordingly. I usually feel that this cake does not need a frosting, but if I am feeling decadent or for a special occasion I frost with "Bourbon Sour Cream Chocolate Frosting" (also posted). This is a light, fluffy, and not too sweet buttercream.

Ingredients For my home brewed chocolate cherry beer cake

  • 3/4 c
    butter, softened
  • 2 c
    white sugar
  • 2
    eggs, room temperature
  • 1/2 c
    cocoa
  • 2 3/4 c
    ap or cake flour ( i use cake flour)
  • 2 tsp
    baking soda
  • 1 c
    beer, your choice. a good stout beer is wonderful.
  • 3/4 c
    buttermilk
  • 1 tsp
    almond extract
  • 1 oz
    (10 ounce jar) maraschino cherries, chopped into halves then fourths, reserve the juice
  • 1/2 c
    juice from maraschino cherries
  • 1 c
    walnuts, chopped

How To Make my home brewed chocolate cherry beer cake

    Preheat oven to 350 degrees F. In electric mixer, cream butter and sugar together. Beat in eggs, one at a time.

    Sift dry ingredients together in a bowl. Place liquid ingredients in another bowl.

    Now add your dry and liquid ingredients alternately to your mixer bowl on low speed until just blended. Stir in chopped cherries and walnuts by hand.

    Bake at 350 in greased 13 X 9 inch pan for 45 - 55 minutes or until sides start to pull away from side of pan. Start checking middle with cake tester @ 45 minutes. This is a thick cake and you want to make sure your middle section is done.

    After cake has cooled, sprinkle with confectioners sugar (using a stencil makes a pretty presentation). Alternately, you may wish to top with your favorite frosting or glaze.
