Mrs. Dowell's Italian Creme Cake

|1/2 c||vegetable shortening|
|1 tsp||baking soda|
|2 c||all purpose flour, sifted 2 times|
|1 c||chopped nuts (i use pecans or walnuts)|
|1 tsp||vanilla extract|

|CREAM CHEESE FROSTING|
|1 pkg||cream cheese, room temperature. 8 oz.|
|1/2 c||butter, room temperature|
|1 lb||powdered sugar (3 1/2 cups)|
|1 tsp||almond extract|

DirectionsPreheat oven to 350*.
Separate eggs and beat whites until stiff. Set aside.Cream butter, shortening and sugar.
Add egg yolks one at a time, beating well after each addition.
Dissolve soda in buttermilk; add alternately with flour. Beat well. Add coconut, nuts and extracts.Fold in stiffly beaten egg whites. Pour into 3 9inch baking pans. using 2 cups of batter for each pan.
Bake at 350* for 25 minutes. Cool completely, then frost with cream cheese frosting. keep in the frig.
