Mrs. Dowell's Italian Creme Cake

this is my favorite recipe for italian creme cake. bakes up beautiful and is so delish. works great for decorating, weddings etc. I hope you will enjoy this version. xoxoxo
all purpose flour, sifted 2 times
chopped nuts (i use pecans or walnuts)
CREAM CHEESE FROSTING
cream cheese, room temperature. 8 oz.
butter, room temperature
powdered sugar (3 1/2 cups)
1Preheat oven to 350*.
Separate eggs and beat whites until stiff. Set aside.
2Cream butter, shortening and sugar.
Add egg yolks one at a time, beating well after each addition.
Dissolve soda in buttermilk; add alternately with flour. Beat well. Add coconut, nuts and extracts.
3Fold in stiffly beaten egg whites. Pour into 3 9inch baking pans. using 2 cups of batter for each pan.
Bake at 350* for 25 minutes. Cool completely, then frost with cream cheese frosting. keep in the frig.
