Gluten-Free Rhubarb Coffee Cake

Spring is the perfect time to enjoy this mouth watering cake,
with the new crops of rhubarb bursting from the ground.

i change up the recipe so that you can use a Gluten Free Flour Blend.

Ingredients

3 c
gluten free flour blend, like pamala's
1 c
brown sugar, firmly packed
1 c
granulated sugar
2 tsp
cinnamon or apple pie spice
3/4 tsp
salt
1 tsp
baking soda
1/2 tsp
baking powder
1/2 c
butter, softened
3
eggs
1/4 c
yogurt , plain, vannila or strawberry
1 c
chopped nuts, pecan or your choice
4 c
rhubarb cut in ½ inch pieces

FOR GLAZE

1 c
powder sugar
1 tsp
cinnamon
3 Tbsp
water

Step-By-Step

1Grease a 13"x9" cake pan preheat oven to 350
2Mix dry ingredients in a bowl. set aside.
3. In a separate bowl cream butter and sugar, add eggs and yogurt, beat on high for a few minutes.
4Combine the liquid and dry ingredients, add rhubarb and nuts. This will be a thick batter, moisture will come from the rhubarb as the cake cooks
5Cook for 1 hour
or
until a toothpick inserted into the center comes out clean.
6To make the glaze mix powdered sugar, Cinnamon Spice Blend and water until smooth.

When cakes starts to cool pour glaze over the top.
ENJOY!
