Cinnamon Streusel Coffee Cake

To make a fresh apple coffee cake, place peeled fresh apple slices on top of the batter in the pan before adding the streusel topping.

This cake can also be prepared early through step 2. Cover and refrigerate overnight. Sprinkle with streusel topping before baking.

Ingredients

1 1/3 c
all purpose flour, divided
1/2 c
sugar
1/2 c
buttermilk
1/3 c
vegetable oil
1 tsp
baking powder
1/2 tsp
baking soda
1/4 tsp
salt
1 large
egg
1/4 c
firmly packed light brown sugar
1/4 c
butter, softened
1/4 c
chopped walnuts
2 tsp
cinnamon

Step-By-Step

1Preheat oven to 400. Coat 9-in. Round cake pan with cooking spray.
2For cake, combine 1cup flour, sugar, buttermilk, oil, baking powder, baking soda, salt and egg in mixing bowl. Beat with wooden spoon until blended. Pour batter into prepared pan.
3For streusel topping, mix remaining flour, brown sugar, walnuts and cinnamon in a small bowl with a fork until mixture is crumbly. Sprinkle over batter.
4Bake until toothpick inserted in center of cake comes out clean, 25-30 mins. Serve warm.
