CARROT CAKE Hawaian style

I made this for my wedding cake top layer (I do wedding cakes)then took it with us on our 4 day honeymoon in 2001 to Longbeach, WA. Every nite ate our cake for desert.

Ingredients

1 1/2 c
oil
2 c
sugar
3 large
eggs
2 c
carrots, grated
1 c
pineapple, crushed, drained
1/2 c
coconut, flaked
2 1/2 c
all purpose flour
1 c
chopped nuts
1 tsp
baking soda
1/2 tsp
salt
1 tsp
cinnamin
1 tsp
vanilla

Directions Step-By-Step

HEAT OVEN 350, Grease 9 X 13 baking dish.

CREAM together : oil, sugar, 3 eggs.
ADD : carrots, pineapple, coconut.

another bowl, MIX DRY INGREDIENTS, until blended.

MIX dry with wet ingredients together.
POUR into baking dish, and BAKE 45 minutes.
