Cake-In-Mug (Almond Cherry Sour Cream Cake-In-Mug)

This started out as a chocolate cake-in-mug, that my brother shared with me; as you can tell, it didn't stay that way! ;)


Note:
The cook time is actually 3 minutes, but the lowest number available is 5 minutes.

Ingredients

9 Tbsp
flour
6 1/2 Tbsp
granulated sugar
1
egg
3 Tbsp
milk
3 Tbsp
oil
1/2 tsp
vanilla extract (i use tahitian when i can)
2 tsp
(heaping) sour cream (optional)
1 tsp
almond extract
1/2 tsp
cherry extract
1/4 tsp
baking soda
pinch
salt (1/8 to 1/4 tsp)
dried cherries (approximately 1/2 handful)

Step-By-Step

1Combine flour & sugar
2Add egg
3Combine oil, milk, sour cream (if using) & extracts; mix thoroughly
4Pour into flour/egg mixture
5Mix well (with out the sour cream, the batter will be a little thicker than with)
6Pour into large soup/coffee mug
7Sprinkle dried cherries on top of batter (they should sink in while cooking.
8Place in microwave (I always place a paper towel or paper plate under)
9Cook 3 - 4 1/2 minutes
10Cake will rise over top of mug
11Insert knife in center to test doneness (Note: outside of cake will appear spongy & moist; inside will be done)
12Empty onto plate & enjoy (I usually enjoy plum-raspberry jam with this on top)
