O...M...G...!!! This is one of the best cakes I have ever eaten. I eat a gluten free diet and in my search for great tasting gluten free desserts I tried this recipe. It is a black walnut pound cake made with Namaste Foods gluten free flour. The flour is a combination of sweet brown rice flour, tapioca flour, arrowroot flour, sorghum flour, rice milk powder, cream of tartar, xanthan gum, baking soda and salt. This flour combination is a delicious and tummy friendly alternative to self rising flour. Even if you dont eat a gluten free diet or like black walnuts you'll love this cake!!!
Preheat the oven to 325 degrees. Grease and flour a 10 inch tube pan.
In a large bowl cream the butter and sugar until light and fluffy. Beat in eggs one at a time then add cinnamon and vanilla.stir in the flour and milk alternating between the two.Fold in the walnuts and pour into the pan.
Bake for about an hour and a half or until a tooth pick inserted into the cake comes out clean. Cool in pan for about 15 to 20 minutes before turning out of the pan to cool completely.
