Ingredients

1/2 c butter, room temperature
1 c sugar
2 eggs
1 1/2 c all purpose flour
1 tsp baking soda
1 tsp salt
2 bananas, mashed
1/2 c greek yogurt, vanilla non-fat
1/ c chopped walnuts (optional)

I hate bananas... but love banana bread! These banana muffins are easy for on the go snacking and help use up overly ripe bananas.

 

Directions

Preheat oven to 350 degrees F. Cream butter and sugar together until fluffy. Add the eggs and beat until well combined.

Add flour, baking soda and salt. Mix just until incorporated. Add banana and yogurt and mix until combined. Stir in walnuts.

Pour batter evenly among 18 lined cupcake tins.
Bake for 25 minutes or until toothpick comes out clean.

It Has Been Over 45 Yrs.Since I Decided TRY Bananas Again.Ate a Green Un~Ripe.Had A Tummy Ache~Really LIKE THIS RECIPE! Not Too Many Bananas.Thank You,Sweets!
