I hate bananas... but love banana bread! These banana muffins are easy for on the go snacking and help use up overly ripe bananas.
butter, room temperature
1 1/2 c
all purpose flour
greek yogurt, vanilla non-fat
chopped walnuts (optional)
1Preheat oven to 350 degrees F. Cream butter and sugar together until fluffy. Add the eggs and beat until well combined.
2Add flour, baking soda and salt. Mix just until incorporated. Add banana and yogurt and mix until combined. Stir in walnuts.
3Pour batter evenly among 18 lined cupcake tins.
Bake for 25 minutes or until toothpick comes out clean.
