Ingredients

1 c lo-fat cottage cheese
1 c skim milk
1/4 Tbsp salt
2 large egg whites
1 c gluten free flour
1 tsp baking soda
1 tsp vanilla or other flavoring

Pat's Notes:

These pancakes are very fluffy and tasty- you won't believe they are lo-cal. Great served with fresh fruit and lo-cal fruit syrup.Can be used in waffle iron too!
This recipe makes lots, so make them all and freeze the rest- when cold-place each pancake between a piece of waxed paper and seal in plastic bag about 3 to a bag.
When ready to use microwave about 30 seconds on a microwave plate or paper plate. Enjoy!

 

Directions

Place egg whites in small mixer bowl with the salt and beat until stiff peaks form- set aside.
Place cottage cheese and milk in blender and whirl at high speed until mixture is creamy.

Scrape down sides of container. add flour and soda. Whirl only until creamy and blended.
Pour into beaten egg whites and fold in evenly.
Pour batter on heated griddle or waffle iron; turn when bubbled and steam has stopped. 1 to 2 minutes on each side. 33 calories each.
