From a favorite nearby cafe, I go to get his Breakfast Sandwich, and this has got to be the most filling and delicious one ever!

My homemade version doesn't include bacon or other meat, but fresh veggies, quick cooked frozen spinach if I don't have the fresh spinach, and a good cheese melted on top!
This version dated 9/10/11 included spinach, grated fresh lemon, avocado, mozzarella and an egg on multi-grain toast. A Pepperidge Farm sandwich thin could be used.
