|1||side of bacon (cut in 4ths)or a ham|
|1 c||tender quick|
|2 c||sugar cure (mortons)|
|1 1/2 c||water|
|3/4 c||liquid smoke flavoring|
Cut side of bacon in 4th's to fit a 5 gallon bucket. Fix brine and soak in cool place 5-6 days. Freeze and slice when half thawed.
