side of bacon (cut in 4ths)or a ham
1 c
tender quick
2 c
sugar cure (mortons)
1 1/2 c
3/4 c
liquid smoke flavoring

Directions Step-By-Step

Cut side of bacon in 4th's to fit a 5 gallon bucket. Fix brine and soak in cool place 5-6 days. Freeze and slice when half thawed.
