Ingredients

2 large
eggs beaten
1 tsp
romano cheese, grated
3 Tbsp
arugula chopped
1 pinch
black pepper
1 small
vine ripe tomato sliced

whole wheat lavash bread
1
cooking spray light
2-3 slice
fresh fruit or berries

Directions Step-By-Step

Using a non-stick skillet,lightly spray the pan with the oil,add the eggs and proceed to prepare as if you are making an omelette.Eggs first,then the teaspoon of cheese,pepper,arugula,and the tomato.Fold it over after a few minutes to form a rectangular shaped omelette.

Warm your lavash for a few seconds in the microwave and slide the omelette about 1/3 of the way down on the bread and roll it up using the envelope method,slice on an angle and plate it with the fruit of your liking,Enjoy!!!!:)

Note:You can usually find the lavash in your grocers deli section or tortilla section.Another substitute you can try is called roll ups which are made by Sara Lee I believe.They both contain much less calories than flour tortillas!
