Spinach Mushroom Frittata

Whipped this up this morning because it fits my diet, believe it or not!

Ingredients

4
eggs
3/4 c
mushrooms, chopped
1/4 c
chopped onions
1 c
baby spinach
2 Tbsp
butter
1/4 c
milk
1/2 c
mozzarella cheese, shredded

Step-By-Step

1Put butter in medium size non stick skillet on medium high heat. When butter is melted, add chopped mushrooms and onions. Saute for 5-10 minutes.
2Add spinach to skillet and cover. Beat eggs with the milk. When spinach is wilted, pour in egg mixture and stir.
3Let cook until almost set. Sprinkle shredded cheese on top. Put in oven under broiler for about 5 minutes, until eggs are set and cheese is slightly golden. Slice in quarters, and serve.
