Ingredients

1/2 c
chopped celery
1/4 c
chopped green pepper
1/4 c
onion, chopped fine
2 Tbsp
oil
4 large
eggs, hard boiled
1 can(s)
(10-3/4 oz.) condensed cream of celery soup
1/2 c
milk
1 c
diced velveeta cheese
1/4 c
pimiento-stuffed green olives, sliced
4 slice
bread, toasted

Step-By-Step

1In a small saucepan over medium-high heat, cook celery, green pepper and onion in oil, until tender, about fifteen minutes. Meanwhile, hard-boil 4 eggs; peel and chop and set aside.

2Into the vegetable mixture, add the soup, the milk, and the Velveeta cubes. Heat and stir until cheese melts.

3Add the chopped eggs and olive slices. Mix well and heat. Spoon over hot buttered toast, and accompany it with some sliced banana and a glass of orange juice for a healthy breakfast.
