I want to start out by saying that this is not my own recipe, but it is definitely one my family loves. It is extremely tasty, quick and best of all, gluten-free. A friend of my mom posted this recipe on Facebook not too long ago and I quickly made it and was in heaven! It's a must try, especially if you are looking for a healthier alternative to regular pancakes.

Ingredients

1
banana, mashed
2
eggs
coconut oil, butter or butter spray

Directions Step-By-Step

1
In a small bowl, mash banana using a fork.
2
Add the two eggs and whisk well.
3
Put a dab of coconut oil on pan and heat.
4
Pour batter onto hot skillet or pan by the spoonful to make round pancakes. Flip them over as soon as the first side seems done. You will know when they are done if they no longer look runny on the top side.
5
*These wonderful pancakes can be served with maple syrup, fruit, nutella or anything else your heart desires. However, I just like mine plain. Enjoy!

these were good but a little too loose for me, I added a tablespoon of oat bran to give them a little more substance and they turned out awesome
