Green Eggs and Ham

Kim Biegacki

I was out eating breakfast on Feb. 28th 2012 for National Pancake Day at IHOP and had green eggs & ham along with my short stack of pancakes. The contributions for Children's Miracle Network Hospitals ended up raising over 3 million. Way To Go, IHOP!!
My breakfast was yummy but I decided to do my own version of green eggs packed with flavor, festive looking and high on protein. See what you think.

My nephew Rhyan who is 16 yrs old was over this weekend and had some green eggs and ham and loved them too. (His request:no shrooms please.)
