Classic ham & swiss quiche w/ a twist

The twist is the cracker crust and the added carrots. Very flavorful and healthy.

Ingredients

1/2 c
reduced-fat ritz crackers, crushed.
1/4 c
" i can't believe it's not butter," melted
4 large
eggs, or egg beaters equivalent, beaten
1/3 c
all-purpose flour
1/4 tsp
pepper.
1/8 tsp
nutmeg.
1 c
low-fat cottage cheese
1 c
reduced-fat, shredded swiss cheese.
1 c
finely chopped ham
1/2 c
shredded carrots.
1/4 c
sliced green onions.

Directions Step-By-Step

Heat oven to 350. Spray a 9" pie pan w/ cooking spray, place on a baking sheet. In bowl, mix melted butter and cracker crumbs until moist and crumbly. Add crumbs to bottom and sides of pie pan, patting down. In bowl, whisk together Egg Beaters, flour, pepper and nutmeg until smooth. Stir in cottage cheese, swiss cheese, ham, carrots and onions. Pour into pie pan. Bake 40 min, or until knife inserted in center comes out clean.
