Banana Oatmeal Muffins

These are wonderful muffins in the morning or as a snack. We make a batch whenever we are on a road trip - perfect in the car!

Ingredients

1 1/2 c
flour
2/3 c
sugar
1 1/2 tsp
baking powder
1/4 tsp
baking soda
1/4 tsp
salt
3/4 c
oatmeal, uncooked
2
bananas large
1/3 c
milk, 2%
1/4 c
vanilla yogurt
1 tsp
vanilla
2
eggs

Step-By-Step

1combine dry ingredients in a bowl, combine wet ingredients in another bowl. Add wet ingredients to dry and mix just until combined.

2Bake at 350 for approximately 25 minutes or until toothpick in center comes out clean

3Notes:

The original recipe calls for buttermilk, I use 2% milk instead. The original recipe also uses oil instead of yogurt. I much prefer the yogurt. The texture is better and the flavor is better. I have also tried strawberry yogurt and that was good also. You can add cinnamon or nutmeg if you which.
