On the go blueberry pancake muffins

When you don't have time to sit down and eat a breakfast, these are wonderful for on the go. Kids especially love them.

Ingredients

2 c
heart healthy bisquick baking mix

eggs
1 c
1% milk
1/2 c
club soda
1 Tbsp
canola oil, or vegetable oil
1 c
frozen or fresh blueberries
1/4 c
maple syrup

Directions Step-By-Step

Heat oven to 350. Spray a 12 muffin pan w/ cooking spray. In lg bowl, combine bisquick mix,eggs, milk, club soda and oil. Pour evenly into muffin cups.

Sprinkle each cup w/ blueberries. Bake about 20 mins, or until a toothpick inserted in center comes out clean. Brush tops w/ syrup.
