Easy Omelet that'll put spurs in your ribs

I love a good Omelet in the morning for breakfast or even for lunch or dinner. But I don't always have time or the right produce to make a good pico de gallo. But I always have a can or RO*TEL or good salsa on the shelf that I can open and smother the omelet in. The hot chilies will get you off to good start.

Ingredients

large eggs, beaten
1 can(s)
ro*tel diced tomatoes with green chili peppers or a good salsa
green pepper,onions, potato, mushrooms

beat 3 eggs and spread out on a hot griddle

add diced vegetables of your choice when ii is mostly done and fold the egg over until done.
