Ingredients

1 c cracker crumbs ( 1 sleeve of crackers, crushed)
5 Tbsp melted butter

2 1/2 c videlia onions (or any sweet onion) thinly sliced
2 eggs
3/4 c milk
1/4 c cheese, shredded
salt and pepper

Melanie's Notes:
I make this a lot for work breakfasts. Our favorite combo is Ritz crackers and Swiss cheese, but you can use whatever kind of cracker/cheese combo you like. Sometimes I fry 6 slices of bacon crisp and crumble it over the pie crust. Then I saute the onions in the bacon fat instead of the oil. It freezes well if there are leftovers, just put the frozen slice into the oven at 350 for about 20 minutes or so. Enjoy.
 
 

Directions

Combine crumbs and butter. Press into an 8” pie pan. Bake 8 minutes at 350. Cool.

Saute onions in oil until tender. Put into the pie shell. Mix eggs, milk, salt & pepper and pour over onions. Top with cheese and bake at 350 for 45 minutes. (you could also use Walla Walla Sweets)

Lynn, once you make it and take it, everyone will be asking for the recipe. Sometimes I double all the ingredients and press the crust into a 9x13 dish. My co-workers LOVE this. You can use any kind of cracker crumbs and any kind of cheese.
