These little morsels are just as good warm as they are cold. Light and tidy, they make a good breakfast on the go.

Ingredients

1 box
frozen spinach, thawed and with water squeezed out
2 large
eggs, beaten
1/3 c
fat free cottage cheese
1/3 c
parmesan cheese
1 dash(es)
each salt, pepper and garlic powder
nonstick spray (such as pam)

Step-By-Step

1Preheat oven to 400. Spray 6 cup muffin pan with nonstick spray, or use a paper towel to lightly grease.
2Combine spinach, eggs, cheeses, salt, pepper and garlic powder in a small bowl.
3Spoon mixture into muffin cups, dividing evenly.
4Bake about 20 minutes at 400. Let cool slightly. Run a knife or small spatula around the quiches to loosen before removing from the pan. Serve warm or cold.
