Irisa's Story

Everything except the eggs, cream & hot sauce, came from my freezer.

I will freeze even the smallest amounts of leftovers…and when I am in the mood to make something out of almost nothing, I’ll put this and that out of the freezer and then see what I have in the fridge.
This was today’s breakfast!

Ingredients

1 link hot italian sausage “ casing removed” brat size
2 tablespoons corn salsa " recipe posted on here"
½ minced onion
mixed peppers from brats meal the other day
1 medium potato from dinner a few nights ago “skin on cut into bite size pieces
about 1 tablespoon sriracha hot sauce
3 large eggs
1 teaspoon heavy cream

Directions Step-By-Step

Remove the casing from the sausage and fry.

Add the salsa, onion, peppers, and the potato and cook till the sausage is thoroughly cooked through.

Beat the eggs with the cream and add the hot sauce, beat again slightly with a fork.

Pour the eggs over the sausage mixture, after a minute or so and it has started to brown on the bottom, flip once …and then enjoy!
