| 1 link hot italian sausage “ casing removed” brat size | |
| 2 tablespoons corn salsa " recipe posted on here" | |
| ½ minced onion | |
| mixed peppers from brats meal the other day | |
| 1 medium potato from dinner a few nights ago “skin on cut into bite size pieces | |
| about 1 tablespoon sriracha hot sauce | |
| 3 large eggs | |
| 1 teaspoon heavy cream |

Directions
Remove the casing from the sausage and fry.Add the salsa, onion, peppers, and the potato and cook till the sausage is thoroughly cooked through.Beat the eggs with the cream and add the hot sauce, beat again slightly with a fork.Pour the eggs over the sausage mixture, after a minute or so and it has started to brown on the bottom, flip once …and then enjoy!
