Ingredients

32 oz bag of frozen hash browns
1 lb cooked lean ham (cubed)
1 onion, diced
1 green pepper, diced
1 1/2 cups shredded cheese (cheddar)
12 eggs
1 cup skim milk
1 tsp salt
1 tsp ground black pepper
8 oz sliced mushrooms (optional)

Penny's Notes:

Here's a recipe you don't have to think about too hard. It is also a weight watchers recipe.

 

Directions

Spray crockpot well with cooking oil.

Divide potatoes, ham, veggies and cheese so you can create several layers of each in the crock pot.

Start with the hash browns, then ham, onions peppers and last cheese. Repeat until you have several layers.

Beat eggs, milk salt and pepper pour over layers in the crockpot cover and turn on low.

Cook for 10-12 hours overnight.

Your welcome. Would be great for Christmas! Just pop into crockpot Christmas Eve, and it is ready the next morning after all presents are opened.

Right on, Penny! I can't wait to share this with my son and his wife. They cook breakfast for both families on Christmas morning so this would be such a time saver for them. I'm so excited!!!

I like to add fresh, slice mushrooms to mine as well, about 8 oz.
