Quick & Easy Breakfast that is very healthy!
Bacon can be substituted with Sausage, Turkey Bacon or something else more vegetarian.

Ingredients

1 Tbsp
olive oil
1 small
onion chopped
2 c
mushrooms sliced
4 slice
bacon
spinach chopped
1/2 can(s)
roasted chile peppers/red peppers

eggs

Directions Step-By-Step

Preheat Oven to 375 ° F

Skillet:
Olive Oil
Add onion – cook 3 minutes
Add Mushrooms – cook 5 minutes
Stir in Bacon, Chiles & Spinach – cook for a few more minutes

Lightly grease Ramekins, put in mixture, put egg in each.

Bake until whites are set, yolk still runny ? 10 minutes
