Loaded with bananas, pineapple, coconut and nuts, this quick bread is flavorful and delicious. Great with coffee at breakfast ro serve for desert.

Ingredients

2 c
all purpose white flour
1 c
granulated sugar
1 tsp
baking soda
1/2 tsp
salt
1/2 c
butter, softened
2 large
eggs
1/4 c
milk
1 c
bananas, mashed
1 Tbsp
orange rind, grated
1 tsp
vanilla extract
1 tsp
almond extract
1 c
flaked coconut
1/2 c
pecans, chopped
1/2 c
pineapple, drained

Step-By-Step

1Preheat overn to 350 degrees

2Grease bottom of 5x9 loaf pan

3In a large mixing bowl, combine flour, sugar, baking soda and salt.

4Stir in butter, eggs, milk, banans,coconut, pineapple, orange rind, vanilla extract and almond extract.

5Beat on low speed until all ingredients are moistened.

6Beat at medium speed for 2 minutes.

7Stir in Pineapple and coconut.

8Pour into a prepared pan and bake for 70 minutes or until a wooden toothpick comes out clean when inserted into the center of the bread.

9When ready, immediately remove the bread from the pan an onto a plate.

10Cool completely before slicing.
