Sweet raisin-cherry bread w/ lemon glaze

Ingredients

1-1/2 c
flour
1/2 c
whole wheat flour
1 c
sugar
2 tsp
baking powder
1/2 tsp
salt
1/4 tsp
baking soda
1
egg, lightly beaten
1 c
fat-free milk
1/3 c
canola oil
1 tsp
vanilla
1/2 c
snipped ried cherries
1/2 c
golden raisins
2 tsp
lemon peel
1/2 c
powdered sugar
1 tsp
lemon peel
1-2 tsp
lemon juice

Directions Step-By-Step

Heat oven to 350 spray a loaf pan w/ cooking spray. In lg bowl, combine flours, sugar, baking powder, salt and baking soda. Make a well in center of flour mix. In another bowl, stir together egg, milk, oil and vanilla. Stir in dried cherries, raisins and 2 tsp lemon peel. Add egg mix to flour mis. Stir until just combined. Spoon into loaf pan, bake 1 hr, or until toothpick inserted in center comes out clean. In small bowl, combine powdered sugar and 1 tsp lemon peel. Stir in enough lemon juice to become drizzling consistency. Drizzle over slightly cooled bread.
