Ingredients

1 2/3 c
all purpose flour
3/4 c
granulated sugar
1 1/2 tsp
baking powder
1/2 tsp
salt
1 tsp
ground cardamom
1/2 c
vegetable oil
1/4 c
milk
2 large
eggs
1 large
pear, peeled, cored and chopped

TOPPING

1 Tbsp
turbinado sugar
1/4 tsp
ground cardamom

Step-By-Step

1Preheat oven to 350F. Lightly coat a loaf pan with nonstick cooking spray.
2In a large bowl, stir together flour, sugar, baking powder, salt and 1 tsp cardamom.
3Beat canola oil, milk and eggs in medium bowl; add to dry ingredients. Stir in pears until well combined.
4Pour batter into pan.
5Stir together sugar and 1/4 tsp cardamom; sprinkle over batter in loaf pan. Bake 50 to 55 minutes or until toothpick inserted in center comes out clean.
6Cool 10 minutes before removing to wire rack to cool completely.
