Don's Favorite Fruit Cake

This is an excellent fruit/nut bread. It has more nuts and less fruit.

I have made this in 3 mini loaf pans for gifts at Christmas time.

Ingredients

3 c
coarsely chopped nuts (brazils, walnuts, pecans or hazelnuts)
1 lb
coarsely chopped dates
1 c
halved maraschino cherries
3/4 c
all purpose flour
3/4 c
sugar
1/2 tsp
salt
1/2 tsp
baking powder
3
eggs
1 tsp
vanilla

Step-By-Step

1Combine all dry ingredients and add to nut mixture, stir until nuts are well coated.
2Beat eggs until foamy. Add vanilla. Fold into nut mixture. Mix well.
3Pour into greased, wax-paper lined 9x5x3 bread pan. Grease the wax paper as well.

Bake at 300 Degrees. for 1 hour and 45 minutes.

Cool in pan 10 minutes before removing to cooling rack.
