I make these every time there is a gathering of any sort. They are fast to make and so yummy that it's hard to eat just one. These are best eaten the day they are made.

These cloverleaf rolls are easy to make and the perfect accompaniment to any meal. Not only do they taste good, but they're also tasty. Using a stand mixer makes these a cinch to whip up, but they can be done the old-fashioned way, too, with a wooden spoon. These dinner rolls are fluffy and slightly buttery. The little bit of salt on top adds a nice pop of flavor. A delicious dinner roll for the holidays.

Ingredients

  • 1 package quick-rise yeast
  • 1 1/3 cups milk, lukewarm
  • 3+ cups all-purpose flour
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon melted butter
  • - coarse sea salt

How To Make cloverleaf rolls

  • Dissolve yeast in warm milk.
    Step 1
    Dissolve the yeast in the warm milk in the bowl of an electric mixer.
  • Stir in 1 cup of flour.
    Step 2
    Stir in 1 cup of flour. Beat until smooth.
  • Stir in the remaining flour, oil, sugar, and salt.
    Step 3
    Stir in enough of the remaining 2 cups of flour, adding the oil, sugar, and salt. Mix on low speed until a soft dough forms.
  • You may need to add more flour.
    Step 4
    You might have to add more than the 3 remaining cups to get it to the soft dough stage.
  • Let the dough rise.
    Step 5
    Cover and let rise in a warm place until doubled in size, about 45 minutes.
  • Prep a muffin tray with non-stick spray or butter.
    Step 6
    Heat the oven to 400 degrees F. Prep a 12-cup muffin pan with cooking spray or melted butter. I tend to use melted butter since baked-on spray is hard to wash off.
  • Punch down and fold the dough.
    Step 7
    Punch down the dough in the center and fold it over a couple of times.
  • Pinch dough and roll into balls.
    Step 8
    Pinch the dough into 1-inch balls and quickly roll them in the center of your palms.
  • Place 3 balls in each muffin cup.
    Step 9
    Place 3 balls in each muffin cup.
  • Brush with melted butter.
    Step 10
    Brush with melted butter.
  • Sprinkle with salt.
    Step 11
    Sprinkle with the coarse sea salt.
  • Bake for 15 minutes.
    Step 12
    Bake 15 minutes or until edges are lightly browned.
