Ingredients

medium ripe bananas chopped
1/2 c
all purpose flour
1/2 c
cornstarch
1/4 c
sweetened shredded coconut (you can use up to 1/2 cup)
2 Tbsp
sugar
1/2 tsp
baking powder
1/8 tsp
salt
2
egg yolks
1/4 c
milk (plus more if needed)
1/4 tsp
vanilla extract
confectioners' sugar, for serving

Step-By-Step

1Stir in a large bowl, bananas, flour, cornstarch, coconut, sugar, baking powder and salt, followed by egg yolks, milk and vanilla. Combine until thick, adding more milk as needed. (tablespoon by tablespoon)
2Using spring-form ice cream scoop, form fritters and drop 4-5 at a time to hot 375 degree oil. Flip once until golden, 2-3 minutes. Remove with slotted spoon, drain on paper towels.
3Let cool 5-10 minutes, sprinkle with confectioner's sugar. EAT!
4NOTE: You can use a potato masher to combine your ingredients.
