Ingredients

1 large onion
2 eggs
1/2 c vegetable oil
1 jalapeno pepper chopped
1 c cream style corn
8 oz sour cream
1 1/2 c self-risinf cornmeal
4 oz shredded sharp cheddar cheese

Well, when you get in a rut and just need a change to spice things up try this Mexican Cornbread with one of your favorite meals. Guarantee they will love it.

 

Directions

Mix oil and eggs well. Add sour cream and corn meal. Then fold in onion, jalapenos, cream style corn, and then shredded sharp cheddar cheese. Bake 350 degrees for 30-35 minutes.

I make this corn bread with the these ingredients,but add hamburger meat.Start with a layer of cornbread on bottom of cornbread, then layer the onions, pepper and cheese, with a layer of hamburger meat also. then top it off with another layer of cornbread. and bake. It is very delicious this way and gets raves.
