- all purpose flour

- meat drippings from roast
1Combine first four ingredients in medium size bowl; beat together with mixer until smooth--about one minute.
2Stir up drippings in roasting pan to mix fat and meat juices. Measure one teaspoon pan drippings into each cup of a 12-cup muffin pan. Place muffin pan into oven (400 degrees) for 3 minutes to heat.
3Pour popover batter into muffin cups, filling each half to 3/4 full. Bake at 400 degrees for 35-40 minutes, until popovers are puffed and golden brown.
4Serve with gravy, broth, or butter, alongside roast beef and vegetables.
