Nancy J.'s Notes:

This is positively one of the best bread cakes I have ever tasted..It needs no topping,
other than a litle powdered sugar..mainly for show.
It is moist with a great flavor.
I buy bananas a dozen or two when they are on sale, and throw them in the freezer.
They ripen and are soft when peeled. I also do tomatoes this way.
They are great to bake or cook with them.
They are not for sliceing!.....LOL

Directions

1
Heat crock pot to high.
Peel the frozen bananas or
the very ripe ones. MASH.
2
In a large bowl, cream together the
softened butter and sugar until fluffy.
3
To the above bowl beat
in the eggs one at a time.
Add the water and the mashed bananas.
Throughly mix in the baking soda and flour.
4
Pour batter into the (RIVAL) greased and flowered pan,
"Bread n Cake Baker", and cover and lock on.
Put the cover on the crockpot
and bake on high 2-3 hours.
5
Lift the bread out of the crock pot
by the black knob, then remove the lid.
Put on a rack 1-15 minutes.
6
Turn pot up side down on a wire rack to cool.
Cut and enjoy.
I like it with a little cream cheese..
strawberries and ....maybe a dollop of whipped cream!!!

Nancy,
I have never done any 'crockpot' baking before. I have a 6qt crockpot-how would you recommend I adjust this recipe to fit the crock and how would I do this in the 6 qt pot I have?
I love banana breads, cakes, anything banana..so I really want to try this but don't want to have to trash it - because I did not do it right!! Thanks for posting this!!

That is a
Bake n Cake Baker..from Rival you can probably find them on the internet..
It is like having minature oven in the crockpot..comes in 3 sizes...
I also bought a trivet from them, and there cookboook.
You could use a coffee can . only fill it half way.
with aluminume foil on top of can..
tie it down.....if you do not have this baker with the lid...
DO NOT put your recipe..directly into a crockpot....breads cakes...etc!!
RIVAL MFG CO .Kansas City, MO... I am sure you will love it!!!

*If using other metal container, either place a rack or crumpled aluminum foil at bottom of crockpot. Place container on top. After adding batter, top container with several paper towels. Make sure crockpot lid is loose and bake for regular amount of time.
