Ingredients

2 pkg cornbread mix (i used jiffy)
1 jalapenos, fresh diced (seeds removed)
2 eggs
2/3 c milk
2 Tbsp sugar
2-3 Tbsp parsley diced
1/4 c cheddar cheese, shredded
1/4 c pepperjack cheese, shredded
1/4 c velveeta cubed

Didi's Notes:

These corn muffins are super easy to fix because you start off with a cornbread mix. The addition of the 3 different cheeses and a jalapeno will make these muffins "crowd pleasers" for sure!!
I usually serve them when I'm making a big pot of chili or stew! There is never any left!!

I hope your family enjoys them as much as we do!!

 

Directions

In a medium bowl add your corn mix, sugar, milk, parsley and eggs. Mix till thoroughly incorporated.

In a separate small bowl, combine together the pepperjack cheese and the cheddar cheese. Add in the diced jalapeno. Set aside

Using a 12 muffin tin, spray with non-stick spray. Fill each muffin tin halfway. Add a couple of cubes of the Velveeta cheese in the center of each muffin.

Now add the 2 cheese and jalapeno mixture over the velveeta cheese. Cover the filling ingredients with the rest of the muffin batter.

Preheat oven to 400F. Bake muffins for 14-16 minutes or till nicely golden.

I've never been a successful corn muffin maker... always too dry... this might, with the cheese, do the trick... I would like to add honey... can I do it in this recipe...it seems every time I've eaten someone's cornbread that I really like, it was made with honey... not just 1 T. but more... ??? Tess..

I love cornbread....but I cannot do Jalapeno's or pepper jack cheese. I could substitute other cheese. Saved

Tess I'm POSITIVE you could do honey... actually I've been thinking more and more of this. I've been trying to stock on honey since the prices have like literally TRIPLED!!! I would go with 3-4 tbls and taste a smidgen of the batter to see....

Loretta!! You brought tears to my eyes, literally!! Your so kind my friend!!

Yes, my daddy had all of us in the kitchen baking up a storm, in between his cooking experiments, lol!! Which ALWAY'S turned out wonderful I might add!! I do every once in a while make eclairs...
My older kids don't love them, my little ones do... alas, they don't "need" them, so I don't make them as often!
He (daddy) just told me to alway's make thing with love... if you don't love them, than noone will!! That's been my motto since I can remember!!

You and yours as well have a wonderful, loving Thanksgiving my friend!!!

thank you, thank you Didi... I am going to try with the honey... should I cut back with the milk???.. I also can't have the peppers or pepper cheese, but will do the cheddar and monteray blend... figure that's no biggie of a change...
