Scrumptious apple pie muffins

Oh so scrumptious muffins with the taste of fall, and they're even healthy for you. Serve w/hot apple cider to really bring out the apple taste in the muffins.

Ingredients

3 c
white whole wheat flour
1-1/2 tsp
cinnamon
1/2 tsp
ground nutmeg
1 c
fat free milk
1/2 c
packed light brown sugar
1/4 c
plus 2 tbsp fat free or light apple flavored yogurt, or plain yogurt if you can't find apple.
1/4 c
unsweetened applesauce
1/4 c
sugar
2 large
eggs
3-1/2 tsp
baking powder
1/8 tsp
baking soda
1/4 tsp
salt
2 c
heaping, apple, peeled, cored and chopped
1/4 c
brown sugar
2 Tbsp
all purpose flour
2 Tbsp
old fashioned oats
1/2 tsp
cinnamon
2 Tbsp
unsalted butter

Directions Step-By-Step

Heat oven to 425. Spray 12 lg muffin cups w/ cooking spray. In small bowl combine, 1/4 cup brown sugar, 2 tbsp flour, oats, 1/2 tsp cinnamon. Cut in unsalted butter until crumbly, set aside.

In lg bowl, combine 3 cups flour, remaining cinnamon, and nutmeg. In another bowl, beat milk, sugar, yogurt, applesauce, eggs, baking powder, salt and baking soda. Beat on low until combined.

Add to flour mix, gently mix just until combined.
Fold in apples. Spoon batter into muffin cups, fill to the top. Sprinkle w/ reserved topping. Bake 5 mins. Reduce heat to 375. Bake 15-18 mins, or until a toothpick inserted into center of 1 muffin comes out clean.
