Muffin in a Cup
No flour so it is gluten free. Low in carbs too. Very easy and quick. Heavier than a flour muffin but still tasty. Breakfast time or snack time it only takes a minute.
- flax meal
- baking powder
- 1 pkt
- truvia or stevia or 1 tblsp. pure maple syrup
- 1 tsp
- 1 lge
- 1 tsp
1Spray inside of coffee mug with cooking spray or grease inside of cup with butter. In a large mug (or small bowl if you prefer) mix dry ingredients. Add egg and butter. Mix well.
2If using the small bowl you can put mixture into mug and place in microwave for 1 minute. Longer depending on the microwave.
3Remove, slice and enjoy. These slices can be a pancake substitute just fine. Your creativity will have this recipe being your go to for a snack any time or any day.
*Maple syrup can be a sugar substitute in this recipe as well. Maple syrup has vitamins and minerals. I like it better than honey.*
