No flour so it is gluten free. Low in carbs too. Very easy and quick. Heavier than a flour muffin but still tasty. Breakfast time or snack time it only takes a minute.

Ingredients

1/4c
flax meal
1/2tsp
baking powder
1 pkt
truvia or stevia or 1 tblsp. pure maple syrup
1 tsp
cinnamon
1 lge
egg
1 tsp
butter

Directions Step-By-Step

Spray inside of coffee mug with cooking spray or grease inside of cup with butter. In a large mug (or small bowl if you prefer) mix dry ingredients. Add egg and butter. Mix well.

If using the small bowl you can put mixture into mug and place in microwave for 1 minute. Longer depending on the microwave.

Remove, slice and enjoy. These slices can be a pancake substitute just fine. Your creativity will have this recipe being your go to for a snack any time or any day.
*Maple syrup can be a sugar substitute in this recipe as well. Maple syrup has vitamins and minerals. I like it better than honey.*

Recently purchased a cookbook and the author has a section of things you can take with you on a trip if you are on a special diet. This would be easy if you are traveling and have access to a microwave in a hotel or a guest at a friends. "Pack" the dry ingredients in baggies inside a plastic container and get the egg and butter from you host. MUFFIN IN A CUP
