These are the most dense, filling muffins ever. They are so moist it is amazing ! Freeze well and serve beautiful !

Ingredients

1 c
flour
1 c
oatmeal, uncooked
1 1/4 c
sugar
2 tsp
baking soda
2 tsp
cinnamon
1/4 tsp
salt
2 c
shredded carrots
1/2 c
raisins
1/2 c
chopped walnuts
1/2 c
coconut
1
apple, peeled and shredded
3
eggs
1 c
applesauce
2 tsp
vanilla extract

Step-By-Step

1Mix all dry ingredients into a large bowl
2Mix together all fruits, veggies and nuts in a smaller bowl
3mix eggs, applesauce and vanilla together and add to dry ingredients.
4mix in fruits, veggies and nuts.
5spray or line muffin tins, place mix to fill each muffin cup.
6Bake @ 350 degrees for 12 min or done.
