Guiltless Cherry-Almond Struesel Muffins



Since I'm diabetic, I'm always on the look out for recipes that I can eat with my family, and for them to enjoy it too. This one was a hit!
don't let the size of the list scare you, it's an oh, so easy recipe. Enjoy!

1 1/2 c
all purpose flour
1 c
whole wheat flour
2 Tbsp
milled flax seed (optional)
1 c
sugar (may use splenda)
1 Tbsp
baking powder
1 tsp
baking soda
1/2 tsp
3/4 c
skim milk
1/2 c
lowfat buttermilk
1/3 c
light ricotta cheese
2 Tbsp
canola oil
1 Tbsp
vanilla extract
1 tsp
almond extract
3 large
egg whites (or 2 whole eggs)
2 c
fresh, pitted cherries 1/4'd, or frozen (easier)
cooking spray
1/4 c
all purpose flour
1/2 c
sliced almonds
1 Tbsp
brown sugar
1 Tbsp
butter (melted)

Directions Step-By-Step

Preheat oven to 375 degrees
Combine 1st 7 ingredients into a bowl; Make a well in the center. Combine milk and next 6 ingredients, (milk thru eggs) stir well with wire whisk, Add to flour mixture, stir until moistened. Gently fold in cherries. Spoon batter into 18 muffin cups coated with cooking spray.
Combine the 1/4 cup flour and rest of ingredients together, and sprinkle evenly over batter. Bake at 375 for 18 mins or until done. Remove from pans immediatly and cool on a wire rack.
