Cran-Oat Muffin

Ingredients

1 1/2 c
skim milk
1 1/3 c
old fashioned rolled oats
1/3 c
light butter
2/3 c
flour
2/3 c
whole wheat flour
1/4 c
flax seed meal
1/2 c
brown sugar splenda
2 tsp
baking powder
1 tsp
baking soda
1/2 tsp
salt
2 large
eggs
1 1/2 c
fresh or frozen cranberries

Directions Step-By-Step

In saucepan combine milk and oats. Bring to boil. Turn off and stir in butter. Slightly cool. Add eggs to the cooled oat mixture. combine all the dry ingredients. Add to the wet ingredients. Fold in cranberries. Divide evenly into greased muffin pan. Bake at 350 for 20-25 minutes until toothpick comes out clean.
