Cottage Cheese, Egg, and Ham Muffins

Kim Biegacki

One of the reasons I love the internet is to find recipes like this one. I had some extra cottage cheese in the refrigerator and wanted to see what else I could make with it and found this recipe on Daisy Brand's website. Wow, they are delicious and we had them for dinner one night served with eggs and sausage. (We love having breakfast for dinner sometimes.) I also love the green onions inside the muffin too. Hope you enjoy.

(If you haven't seen yet, I love taking pics of my food that I make. Not sure what I like better? Cooking or the photographing of the finished product. This pic of the 2 muffins I really liked the lighting that came from the window that day.)
