Ingredients

3 1/2 c
all purpose flour
3/4 c
sugar
2 1/2 tsp
baking powder
1/4 tsp
baking soda
1/4 tsp
salt
1/2 tsp
cinnamon
1/2 tsp
ginger
1/4 tsp
nutmeg
1/8 tsp
cloves
1 1/2 c
carrot, shredded
1/2 c
yogurt, low-fat, plain
1 large
egg
1/4 c
canola oil
1 tsp
vanilla extract
1 c
applesauce, unsweetened
1 Tbsp
coconut (optional)

Step-By-Step

1Preheat oven to 400*. Lightly grease regular-sized muffin tin.
2Combine dry ingredients. Add carrots and blend. Stir together yogurt,oil,vanilla and applesauce. Stir the liquid ingredients into the dry, just until moistened.
3Spoon into tins. Sprinkle top with coconut. Bake 20-22 min. ( each muffin: 232 calories, 5.34 grams fat, 1.86 grams fiber) Enjoy!
